Zucchini and Chocolate Chip Bread

This zucchini bread is perfection with the right combination of zucchini and dark chocolate chips.

Directions

  • Preheat over to 350 degrees

  • Grease a 9*5 loaf pan with non stick spray

  • In a medium bowl, whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.  Set aside.

  • In a large bowl, stir together the brown sugar, eggs, and melted butter until smooth.  Add the shredded zucchini and vanilla and mix until combined.

  • Add the dry ingredients and mix until just combined.  Fold in the 1 cup of the chocolate chips.

  • Pour batter into prepared loaf pan and sprinkle remaining chips. 

  • Bake until golden brown 50-60 minutes.

  • Remove from oven and allow to cool 10 minutes.  Loosen the edges with a knife and remove from pan.  Allow to cool completely before slicing.

Ingredients

  • 1 3/4 cups of all purpose flour

  • 1 1/2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1 1/2 tsp ground cinnamon

  • 1/4 tsp. nutmeg

  • 1/2 tsp. kosher salt

  • 3/4 cup of packed brown sugar

  • 2 large eggs, room temperature

  • 1/2 unsalted butter, melted and cooled

  •  2 cups shredded zucchini

  • 1 1/2 tsp pure vanilla extract

  • 1 1/4 cups of chocolate chips of your choice, divided
