Wine Sauce for Fish



This simple white wine sauce is perfect for any white fish. We used Overmountain Vineyards Petit Manseng.

Wine Sauce for Fish


  • Melt butter in a sauce pan over low heat.  (I use same pan I cooked the fish in).

  •  Add shallots and garlic.  Cook until fragrant and shallots are translucent.  Add the tarragon, salt and pepper.

  • Increase heat and stir in wine and lemon juice.  Bring to a simmer and whisk for 1 minute.

  • Remove from heat and sprinkle in parsley.  Pour over your favorite white fish.


  • 3 Tbls. unsalted butter

  • 2 cloves minced garlic

  • 2  Tbls. chopped shallots

  • 1 tsp. tarragon

  • salt and pepper

  • 1/2 cup of white wine

  • 1 lemon, juiced

  • 1 Tbls. fresh parsley for garnish
