Wine Sauce for Fish
This simple white wine sauce is perfect for any white fish. We used Overmountain Vineyards Petit Manseng.
Melt butter in a sauce pan over low heat. (I use same pan I cooked the fish in).
Add shallots and garlic. Cook until fragrant and shallots are translucent. Add the tarragon, salt and pepper.
Increase heat and stir in wine and lemon juice. Bring to a simmer and whisk for 1 minute.
Remove from heat and sprinkle in parsley. Pour over your favorite white fish.
3 Tbls. unsalted butter
2 cloves minced garlic
2 Tbls. chopped shallots
1 tsp. tarragon
salt and pepper
1/2 cup of white wine
1 lemon, juiced
1 Tbls. fresh parsley for garnish
