Vegetarian Breakfast Casserole

An easy casserole that can be made ahead.
Preheat oven 350 degrees.
Spray 9*13 pan.
In a medium skillet over medium heat saute the peppers and mushrooms.
Whisk the eggs, milk and seasonings. Set aside.
Layer the hashbrowns in dish. Add the protein crumbles, vegetables and cheese.
Pour the eg mixture on top.
Bake uncovered for 35 minutes or until center is set.
1/2 cup milk of your choice
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
8 oz. thawed hashbrowns
1/2 cup diced peppers and mushrooms
5 oz. plant based crumbles of your choice
1 cup cheddar cheese or your choice
