An easy casserole that can be made ahead.

Vegetarian Breakfast Casserole

Directions

  • Preheat oven 350 degrees.

  • Spray 9*13 pan.

  • In a medium skillet over medium heat saute the peppers and mushrooms.

  • Whisk the eggs, milk and seasonings.  Set aside.

  • Layer the hashbrowns in dish. Add the protein crumbles, vegetables and cheese.

  • Pour the eg mixture on top.

  • Bake uncovered for 35 minutes or until center is set.

Ingredients

  • 10 eggs

  • 1/2 cup milk of your choice

  • 1/2 tsp. salt

  • 1/4 tsp. pepper

  • 1/4 tsp. garlic powder

  • 8 oz. thawed hashbrowns

  • 1/2 cup diced peppers and mushrooms

  • 5 oz. plant based crumbles of your choice

  • 1 cup cheddar cheese or your choice
