Twice Baked Potato Casserole



A quick weekend day side or combine with a salad and it can be your main dish for a meatless meal.

Twice Baked Potato Casserole


  • Preheat oven to 400 degrees.

  • Wash and dry potoatoes.

  • Cook in the microwave for 12 minutes or until done.

  • Cut potatoes in half and scoop out the pulp and put into a mixing bowl with the butter.

  • Mash until combined leaving as many or few lumps as you like.

  • Add the milk, 1/2 of the scallions and salt and pepper.

  • Cut the skins into chunks and add to mixture.  Stir.

  • Pour into a greased 8*8 pan and sprinkle cheese on top.

  • Cook for 20 minutes or until is golden and bubbly.

  • Remove from oven and sprinkle with remaining scallions.  

  • You can prepare ahead of time but increase your cooking time to 30 minutes or until done.


  • 3 russett potatoes

  • 1/4 cup butter

  • 1 cup milk

  • salt and pepper

  • bunch of scallions, chopped

  • 8 oz your choice of cheese, shredded
