Great soup for a cold evening. So many options to make it just the way you like it.

Taco Soup

Directions

  • If using hamburger or chicken cook over medium heat with onion and garlic until done.   

  • Place all soup ingredients in a crockpot and cook on low for 8 hours or high for 4 hours

  • Spoon into bowls and add toppings of your choice

Ingredients

  • Protein of your choice 1lb hamburger, chicken or plant based crumbles.  I use shredded rotisserie chicken to save time.  

  • If using hamburger or chicken breasts you will need 1 onion chopped and 3 cloves of minced garlic

  • taco seasoning mix

  • 1 can diced tomatos, not drained

  • 28 oz can crushed tomatoes

  • 1 can green chilis, not drained

  • 1 can each kidney, black and pinto beans, drained and rinsed

  • 1 can red enchilada sauce

  • 4 cups chicken or beef, depending on your protein choice

  • toppings: sour cream or plain yogurt, shredded mexican cheese blend, chopped tomatoes and lettuce, tortilla strips or chips, green onions and cilantro
