Taco Soup

Great soup for a cold evening. So many options to make it just the way you like it.
Directions
If using hamburger or chicken cook over medium heat with onion and garlic until done.
Place all soup ingredients in a crockpot and cook on low for 8 hours or high for 4 hours
Spoon into bowls and add toppings of your choice
Ingredients
Protein of your choice 1lb hamburger, chicken or plant based crumbles. I use shredded rotisserie chicken to save time.
If using hamburger or chicken breasts you will need 1 onion chopped and 3 cloves of minced garlic
taco seasoning mix
1 can diced tomatos, not drained
28 oz can crushed tomatoes
1 can green chilis, not drained
1 can each kidney, black and pinto beans, drained and rinsed
1 can red enchilada sauce
4 cups chicken or beef, depending on your protein choice
toppings: sour cream or plain yogurt, shredded mexican cheese blend, chopped tomatoes and lettuce, tortilla strips or chips, green onions and cilantro
