Sweet Potato Toast

A variation of avocado toast

Sweet Potato Toast


  1. Preheat oven to 400F. Line a large baking sheet with parchment paper.

  2. Cut off the ends of the sweet potato, slice ½ inch thick lengthwise and place on a baking sheet.

  3. Lightly brush oil on top of sweet potato slices with pastry brush.

  4. Bake20 minutes.  Test doneness by piercing with a fork.

  5. Mix cream cheese with Orgain Organic Protein Powder in a bowl until smooth and combined.

  6. Top sweet potato slices with cream cheese, sliced avocado, microgreens and everything bagel seasoning.
