Squash Flatbread

This is a dish can go with squash, zucchini or a combination of both.

Squash Flatbread


  • Slice squash thinly.

  • Grill or roast squash at 375 degrees for 15 minutes.

  • While squash grills, combine ricotta, goat cheese, lemon zest, Italian seasonings, salt and pepper.

  • Remove squash from grill.

  • Place flatbread on grill to warm, not cook.

  • Spread cheese mixture on flatbread.

  • Top with squash. 

  • Serve immediately.

  • 3 oz. goat cheese

  • 2 Tbsp. Italian seasonings
