Slice squash thinly.
Grill or roast squash at 375 degrees for 15 minutes.
While squash grills, combine ricotta, goat cheese, lemon zest, Italian seasonings, salt and pepper.
Remove squash from grill.
Place flatbread on grill to warm, not cook.
Spread cheese mixture on flatbread.
Top with squash.
