This classic dish is one your can't go wrong with. Cheese, potatoes repeat!
Preheat oven to 350 degrees.
Grease a 9*13 baking dish
In a small sauce pan melt the butter and stir in flour
Whisk in the milk and season with salt and cayenne pepper
Cook sauce on low until smooth and boiling. Whisk occasionally.
Reduce heat and stir in 1 cup of cheese.
Place half of sliced potatoes in the baking dish. Pour half of the cheese sauce over potatoes. Repeat with second layer of potatoes and cheese sauce.
Sprinkle remaining 1/2 cup cheddar on top and a little paprika.
Bake uncovered for 1 hour or until potatoes are fork tender.
4 cups thinly sliced potatoes ( I used Russet with skins on)

1 1/2 cups grated sharp cheddar, divided 1 cup and 1/2 cup
