The perfect casserole to make ahead or serve it fresh.

Savory Chicken Casserole

Directions

  • Cook rice according to package directions.  

  • While rice is cooking, melt butter in a dutch oven and saute celery, onion, carrots and mushrooms.

  • Cook until tender then add chicken, rice, soup and sour cream.

  • Stir until combined and pour into a 8*8 or loaf pan.

  • Stir together the topping ingredients and sprinkle on top of casserole.

  • Cover and bake at 350 degrees for 20 minutes.  Uncover and bake 5-10 minutes more.

Ingredients

  • Filling

  • 2 cups diced chicken

  • 1 long grain rice mix

  • 1/2 cup butter

  • 2 celery stalks, diced

  • 1/2 onion, diced

  • 4 oz. carrots, shredded

  • 4 oz. mushrooms, diced

  • 4 oz. sour cream

  • 1 can cream of mushroom soup

  • Topping

  • 1 sleeve buttery crackers, crushed

  • 6 oz. French-fried onions. crushed

  • 3/4 cup butter, melted
