Savory Chicken Casserole

The perfect casserole to make ahead or serve it fresh.
Cook rice according to package directions.
While rice is cooking, melt butter in a dutch oven and saute celery, onion, carrots and mushrooms.
Cook until tender then add chicken, rice, soup and sour cream.
Stir until combined and pour into a 8*8 or loaf pan.
Stir together the topping ingredients and sprinkle on top of casserole.
Cover and bake at 350 degrees for 20 minutes. Uncover and bake 5-10 minutes more.
2 cups diced chicken
1 long grain rice mix
1/2 cup butter
2 celery stalks, diced
1/2 onion, diced
4 oz. carrots, shredded
4 oz. mushrooms, diced
4 oz. sour cream
1 can cream of mushroom soup
1 sleeve buttery crackers, crushed
6 oz. French-fried onions. crushed
3/4 cup butter, melted
