Pesto Pasta in a Jar
This is the perfect way to have individual portions. Perfect for a picnic or trip to a winery.
Bring a large pot of salted water to a boil.
Cook pasta according to package directions, until al dente.
Drain reserving 1/2 cup pasta water and return to pot.
While pasta cooks make pesto. In a food processor blend basil, walnuts, Parmesan and garlic.
Slowly add olive oil in a steady stream.
Season with salt.
Add pesto and 1/4 cup pasta water to pasta and stir until creamy.
Add more pasta water until desired consistency.
Divide pasta among 6 Mason jars and top with feta.
1 lb. penne or your favorite bite size pasta
2 cups fresh basil leaves
1/3 cup raw walnuts, toasted (I used sliced almonds)
1/3 cup grated Parmesan
2 cloves garlic, minced
1/4 cups EVOO
1 pt. miniature tomatoes, various colors, halved
1 cup crumbled feta
