Peanut Butter Cookies

Peanuts are good source of protein right? These are delicious and they freeze well to break out a few at a time.

Peanut Butter Cookies


  • Preheat oven to 350 degrees

  • Line 2 baking sheets with silicone or parchment paper or make one sheet and freeze dough for later use

  • In the bowl of an electric mixer fitted with a paddle attachment cream together butter, granulated sugar and brown sugar until combined

  • Mix in peanut butter then blend in egg and vanilla.  With mixer set on low add in flour mixture and mix just until combined

  • Scoop dough out and shape into balls then place on prepared baking sheet 2 inches apaprt

  • Using a fork flatten cookies then turn fork in opposite direction and flatten slightly

  • Bake one sheet at a time for 9 minutes

  • Let cool on the baking sheet 5 minutes then transfer to plate to cool completely  


  • 1 1/3 cup all-purpose flour

  • 3/4 tsp. baking soda

  • 1/2 tsp. baking powder

  • 1/4 tsp. salt

  • 1/2 cup unsalted butter, softened

  • 1/2 cup gradulated sugar

  • 1/2 cup packed light brown sugar

  • 3/4 cup creamy or crunchy peanut butter

  • 1 egg

  • 1 1/2 tsp. vanilla extract
