Pasta in a Butternut Squash Sauce

Nutty and sweet with a hint of butterscotch makes a great side dish

Pasta in a Butternut Squash Sauce


  • Preheat oven 425 degrees

  • Combine squash, olive oil, salt and pepper

  • Roast squash for 30 minutes

  • Prepare pasta as directed saving 1/2 cup of pasta water

  • In a blender mix together garlic, protein powder, roasted squash, pinch of salt and pepper, cream, broth, cheese and nutmeg

  • Pour sauce over pasta over low heat using pasta water if too thick

  • Top with parsley and parmesan cheese


  • 1 scoop of unsweetened protein powder

  • 3 cups cubed butternut squash

  • 3 cloves garlic, minced

  • 1 1/2 Tbs. olive oil

  • salt and pepper

  • 3/4 coconut cream or half and half

  • 1/2 cup vegetable broth

  • 1/2 cup Parmesan cheese, grated

  • pinch of Nutmeg

  • 16 oz. fettuccine

  • 2 Tbs. parsley
