Oatmeal Peanut Butter Cookies

Oatmeal Peanut Butter Cookies


  • Preheat oven to 350°F. 

  • Line a cookie sheet with parchment paper or foil

  • Combine oats, flour, brown sugar, sugar, baking powder, baking soda and peanuts in a large bowl

  • In a smaller bowl, whisk together creamy peanut butter, softened butter, eggs, and vanilla 

  • Add to flour mixture; stir until combine. 

  • Gently stir in peanut butter cups.

  • Use a 1/4-cup measure or scoop to drop mounds of dough about 4 inches apart onto prepared cookie sheet. 

  • Flatten dough mounds to about 3/4 inch thick.

  • Bake for 12 to 14 minutes or until edges are brown.

  • Cool on cookie sheet for 1 minute

  • Transfer to a wire rack and let cool


  • 1 1/4 cup rolled oats

  • 1/4 cup all purpose flour

  • 1/2 cup packed brown sugar

  • 1/4 cup sugar

  • 1/2 tsp. baking powder

  • 1/2 cup chopped dry roasted peanuts,chopped

  • 1 cup mini peanut butter cups, chopped

  • 1/2 cup creamy peanut putter

  • 2 eggs

  • 1/4 softened butter

  • 1/2 tsp. vanilla
