No Bake Oatmeal Bars

These are so good I couldn't get the picture taken before someone ate a few.
Line an 8*8 pan with parchment paper
In a large saucepan, over medium heat, melt the butter, brown sugar and vanilla. Cook until sugar is dissloved.
Remove from heat and add oats, cinnamon and salt. Stir to combine well.
Spread half of the oat mixture in the prepared pan.
Melt the chocolate chips and peanut butter (or a substitution) in the microwave. Start with 30 seconds.
Pour 3/4 of chocolate mixture over oat mixture. Spread evenly.
Pour the remaining oats on top and spread.
Drizzle any remaining chocolate on top.
Cover and place in refrigerator for 2 hours.
Allow to sit a room temperature for a few minutes for easy slicing.
1 cup unsalted butter
1/2 cup brown sugar
1 tsp. vanilla extract
3 cups old-fashioned rolled oats (not instant)
1/2 tsp. cinnamon
1/4 tsp. salt
1 cup semi-sweet chocolate chips
3/4 cup smooth peanut butter (you can also use crunchy peanut butter, cookie butter or nutella)
