No Bake Oatmeal Bars

These are so good I couldn't get the picture taken before someone ate a few.

No Bake Oatmeal Bars


  • Line an 8*8 pan with parchment paper

  • In a large saucepan, over medium heat, melt the butter, brown sugar and vanilla.  Cook until sugar is dissloved.

  • Remove from heat and add oats, cinnamon and salt.  Stir to combine well.

  • Spread half of the oat mixture in the prepared pan.

  • Melt the chocolate chips and peanut butter (or a substitution) in the microwave.  Start with 30 seconds. 

  • Pour 3/4 of chocolate mixture over oat mixture.  Spread evenly.

  • Pour the remaining oats on top and spread.

  • Drizzle any remaining chocolate on top.

  • Cover and place in refrigerator for 2 hours.  

  • Allow to sit a room temperature for a few minutes for easy slicing.


  • 1 cup unsalted butter

  • 1/2 cup brown sugar

  • 1 tsp. vanilla extract

  • 3 cups old-fashioned rolled oats (not instant)

  • 1/2 tsp. cinnamon

  • 1/4 tsp. salt

  • 1 cup semi-sweet chocolate chips

  • 3/4 cup smooth peanut butter (you can also use crunchy peanut butter, cookie butter or nutella)
