Mediterranean Salad

I am always looking to add a little more protein into my diet. This simple protein side dish is perfect.

Mediterranean Salad


  • Preheat oven to 400 degrees

  • Toss chickpeas, olive oil and seasoning in a bowl.  Spread on a baking sheet.  Roast for 30 minutes, shaking pan after 15 minutes.  

  • Remove from oven and let cool.

  • In a serving bowl mix chick peas and remaining ingredients.  Add juice and zest just before serving.


  • 2 cups canned chickpeas, rinsed,drained and patted dry

  • 2 Tbls. olive oil

  • 2 Tbs. Mediterranean seasoning of your choice (I used The Olive's Mediterranean blend)

  • 1 cup diced red onion

  • 1/2 cup chopped parsley

  • 1 cup diced cucumbers

  • 1 cup cherry quartered tomatoes

  • lemon juice and zest of 2 lemons

  • 2 tsp. sea salt

  • 1 tsp. black pepper

  • 1/2 cup pitted and chopped Kalamata olives
