I am always looking to add a little more protein into my diet. This simple protein side dish is perfect.
Preheat oven to 400 degrees
Toss chickpeas, olive oil and seasoning in a bowl. Spread on a baking sheet. Roast for 30 minutes, shaking pan after 15 minutes.
Remove from oven and let cool.
In a serving bowl mix chick peas and remaining ingredients. Add juice and zest just before serving.
2 cups canned chickpeas, rinsed,drained and patted dry
2 Tbls. olive oil
2 Tbs. Mediterranean seasoning of your choice (I used The Olive's Mediterranean blend)
1 cup diced red onion
1/2 cup chopped parsley
1 cup diced cucumbers
1 cup cherry quartered tomatoes
lemon juice and zest of 2 lemons
2 tsp. sea salt
1 tsp. black pepper
1/2 cup pitted and chopped Kalamata olives
