A hearty casserole that be meatless or accommodate a protein.

Hash Brown Egg Bake


  • Preheat oven to 375 degrees

  • In a saucepan cook the peppers and onion 

  • Layer the thawed hash browns in a 9*13 casserole dish and season with salt and pepper

  • In a large bowl beat 12 eggs

  • Add the milk and cooked peppers and onion 

  • Pour the egg mixutre over the hash browns

  • Spread the shredded cheese on top

  • Cook for 45 minutes or until eggs are set


  • 30 oz frozen cubed hash browns, thawed

  • 1lb. if you are using protein

  • 1 red pepper, diced

  • 1 green pepper,diced

  • 1 onion, diced

  • 8 oz. shredded cheddar cheese

  • salt and pepper

  • 1 cup whole milk
