This soup is delicious and a great way to use leftover chicken.

Chicken Gnocchi Soup

Directions

  • Melt the butter and EVOO in a large pot over medium heat.

  • Add the chopped onion, celery and garlic until the onion become traslucent.

  • Whisk in flour and cook for 1 minute.  Whisk in the half and half and simmer until thick.

  • Pour into a crockpot.

  • Whisk in the chicken broth.  Add the thyme, parsley, carrots, chicken and gnocchi.

  • Cook on low for 6 hours.

  • Add spinach and finish cooking.

Ingredients

  • 4 Tbls. real butter

  • 1 Tbls. EVOO

  • 1 cup diced onion

  • 1/2 cup diced celery

  • 2 garlic cloves, minced

  • 1/4 cup all-purpose flour

  • 1 qt. half and half

  • 28 oz. chicken broth

  • 1/2 tsp. dried thyme

  • 1/2 tsp. dried parsley flakes

  • 1 cup carrots, shredded

  • 1 cup spinach leaves

  • 1 cup chicken, diced

  • 16 oz. ready to use gnocchi
