Chicken Gnocchi Soup

This soup is delicious and a great way to use leftover chicken.
Directions
Melt the butter and EVOO in a large pot over medium heat.
Add the chopped onion, celery and garlic until the onion become traslucent.
Whisk in flour and cook for 1 minute. Whisk in the half and half and simmer until thick.
Pour into a crockpot.
Whisk in the chicken broth. Add the thyme, parsley, carrots, chicken and gnocchi.
Cook on low for 6 hours.
Add spinach and finish cooking.

4 Tbls. real butter
1 Tbls. EVOO
1 cup diced onion
1/2 cup diced celery
2 garlic cloves, minced
1/4 cup all-purpose flour
1 qt. half and half
28 oz. chicken broth
1/2 tsp. dried thyme
1/2 tsp. dried parsley flakes
1 cup carrots, shredded
1 cup spinach leaves
1 cup chicken, diced
16 oz. ready to use gnocchi
