This weeknight meal is easy and full of flavor. To make this meal easier you can use already prepared fajita seasoning or make several servings ahead of time and store with your other spices.
Add the fajita seasoning ingredients to a small mixing bowl and stir together.
Generously sprinkle the seasoning on both sides of the chicken.
Heat the oil in a large skillet over medium heat. Sear the chicken breasts for 8 minutes on each side.
Once the chicken is cooked, remove it to a plate and let it rest for a couple of minutes. Add the peppers and onions to the same skillet over medium heat and saute for 5 minutes. Stir frequently.
When the peppers are almost done slice the chicken breasts into strips.
Add the chicken back to skillet, add a fresh lime juice and stir everything together.
Serve immediatley with tortillas and toppings.
3 boneless skinless chicken breasts
1 onion, thinly sliced
3 peppers of your choice, thinly sliced
2 Tbls. olive oil
1/2 tsp. chili powder
1/2 Tbls. ground cumin
1 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper
sour cream or plain yogurt
