  • Filling directions

  • Saute onion, beans and green chilis until onion is tender.  Add chicken.  Heat through.

  • Preheat oven 350 degrees. 

  • Assembly directions

  • Spoon 1/4 cup of sauce on bottom of baking dish

  • Layer 1/4 cup of filling on tortilla and sprinkle with cheese.

  • Roll and place in baking dish

  • Layer remaining sauce and cheese over enchiladas

  • Bake for 30 minutes

  • 1 Tbs. olive oil

  • Rotisserie chicken, diced 

  • onion, diced

  • 1 can 15.5oz black beans

  • 4oz. green chilis

  • Other ingredients

  • 19oz red enchilada sauce

  • 8oz. shredded mexican cheese blend

  • 12 tortillas
