Chicken and Gnocchi with Broccoli (sheet pan)
Recipe calls for broccoli only but I added sweet potatoes as well.
Heat oven to 450 degrees
Line a sheet pan with foil.
In a large mixing bowl, combine the chicken, gnocchi and lemon slices. Add the lemon juice, olive oil and spices. Mix well, then pour onto a sheet pan adn spread in a single layer.
Bake for 15 minutes. Stir well, then add any vegetables to the pan. Bake for 15 minutes or until the chicken is cooked through.
Top with parmesan, if desired.
1.5 lbs. boneless, skinless chicken breasts
16 oz. shelf stable gnocchi
1 lemon, thinly sliced
1 lemon, juiced
2 Tbs. olive oil
1 tsp. garlic powder
1 tsp. crushed red pepper flakes
salt and pepper
1 bunch of broccoli
Parmesan shreds for garnish
