Bruschetta Pasta Salad
Pair with crusty bread for a perfect summer meal.
Cook pasta according to package directions until al dente. Drain and set aside.
In a bowl, whisk olive oil and balsamic vinegar, then season with salt and pepper.
Add pasta, garlic and tomatoes to dressing bowl and combine.
Garnish with basil and serve.
1 lb. orecchiette (or your choice of similar pasta)
1/4 cup extra-virgin olive oil
1 Tbs. balsamic vinegar
salt and pepper
1 clove, garlic, minced
1 pint multi-colored cherry tomatoes, halved
1/4 cup basil, torn for garnish
