Broccoli Cornbread

This make ahead dish is moist with a sweet corn flavor from the Jiffy mix. Easy way to get your green vegetable hater to eat broccoli.

Broccoli Cornbread


  • Preheat oven to 375 degrees and grease a 9*13 baking dish

  • Beat the cottage cheese, butter and eggs in a large bowl.  Stir in Jiffy mixes until moistened.  Fold in broccoli, onion and 1 cup cheddar cheese.  

  • Pour batter into baking dish and sprinkle with remaining cheddar cheese.

  • Bake for 40 minutes or until toothpick comes out clean.  Cool for 10 minutes before cutting.


  • 1 cup cottage cheese (I like large curd)

  • 3/4 cup melted butter (use real butter)

  • 4 eggs

  • 1 package of Jiffy cornbread mix ( it must be Jiffy)

  • 1 10oz. package of frozen broccoli, thawed

  • 1 large onion, chopped

  • 1 1/2 cups shredded Cheddar cheese, divided
