Broccoli Cornbread

This make ahead dish is moist with a sweet corn flavor from the Jiffy mix. Easy way to get your green vegetable hater to eat broccoli.
Directions
Preheat oven to 375 degrees and grease a 9*13 baking dish
Beat the cottage cheese, butter and eggs in a large bowl. Stir in Jiffy mixes until moistened. Fold in broccoli, onion and 1 cup cheddar cheese.
Pour batter into baking dish and sprinkle with remaining cheddar cheese.
Bake for 40 minutes or until toothpick comes out clean. Cool for 10 minutes before cutting.
Ingredients
1 cup cottage cheese (I like large curd)
3/4 cup melted butter (use real butter)
4 eggs
1 package of Jiffy cornbread mix ( it must be Jiffy)
1 10oz. package of frozen broccoli, thawed
1 large onion, chopped
1 1/2 cups shredded Cheddar cheese, divided
