Blue Cheese Sauce
This sauce is pure decadence. It pairs perfectly with your favorite pasta. I used gnocchi. The key is to mix in the pasta and allow the sauce to blend in.
Prepare pasta according to package directions.
Heat the olive oil in a skillet over medium high heat.
Add the prosciutto and cook until crispy. Remove from pan and allow to drain on a paper towel.
In the same pan, saute the shallot until softened.
Add the spinach and allow to wilt 3-5 minutes.
Add your pasta to pan and stir to coat.
Add the milk and blue cheese and stir unitl melted. Serve immediately.
1 Tbsp. olive oil
4 oz. prosciutto
6 oz. spinach
4 oz. blue cheese crumbled
