Blue Cheese Sauce



This sauce is pure decadence. It pairs perfectly with your favorite pasta. I used gnocchi. The key is to mix in the pasta and allow the sauce to blend in.

Blue Cheese Sauce


  • Prepare pasta according to package directions.

  • Heat the olive oil in a skillet over medium high heat.

  • Add the prosciutto and cook until crispy.  Remove from pan and allow to drain on a paper towel.

  • In the same pan, saute the shallot until softened.

  • Add the spinach and allow to wilt 3-5 minutes.

  • Add your pasta to pan and stir to coat.  

  • Add the milk and blue cheese and stir unitl melted.  Serve immediately.


  • 1 Tbsp. olive oil

  • 4 oz. prosciutto 

  • 6 oz. spinach

  • 1 shallot

  • 4 oz. blue cheese crumbled
