Beef Stroganoff

15 minutes prep time and 8 hours (low) or 5 hours (high) in a crockpot

I changed this recipe to a crockpot version to make is super simple for a busy weekday night.

Beef Stroganoff

Directions

  • Place meat, mushrooms, onions and garlic in crockpot.  Add broth, paprika and salt. Cover.

  • Cook on low for 8 hours or high for 5 hours.

  • Mix sour cream, flour, and mustard.  Add to crockpot.  Stir until blended.  Cover and continue cooking for 15 minutes.  

  • Meanwhile cook noodles according to package directions.  

  • In a bowl ladle noodles and meat sauce.  

  • Garnish with parsley.

Ingredients

  • 2 lbs. boneless beef for stew, cut into bite size pieces

  • 10 oz. mushrooms, halved

  • 1 medium onion, chopped

  • 1 clove garlic, minced

  • 1 cup beef broth

  • 2 tsp. paprika

  • 1 tsp. salt

  • 1 cup sour cream ( I use half sour cream and half plain yogurt)

  • 2 Tbs. flour

  • 1 Tbs. dijon mustard

  • 1 pkg. egg noodles, uncooked

  • 2 Tbs. parsley
