Bacon and Brussels Sprouts Pasta
Great way to eat Brussel Sprouts and you can pick the pasta
Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
While pasta cooks, cook the bacon until crisp. Crumble once cooled.
To the same pan add the Brussels Sprouts, salt and pepper. Cover on med-high and cook 5 minutes.
Lower heat to medium and add shallots and raisins cook 2 minutes.
Add wine and cook 2 minutes.
Add cooked bacon, pasta and pasta water and stir until combined.
Sprinkle with cheese and serve immediately.
6 strips bacon
1 lb Brussels sprouts, ends trimmed and halved
8 oz bow-tie pasta or your choice
1/2 tsp. salt and pepper
1/2 cup dry white wine
1/2 cup raisins
2 shallots, chopped
1/2 cup shredded Asiago or Parmesan cheese
