Arugula is rich in Vitamin C and K. This summer green pairs great with a lighter meal.

Arugula Salad


  • In a serving bowl drizzle the arugula with EVOO, lemon juice, salt and pepper.

  • Toss until well mixed.

  • Sprinkle with cheese and seasoning.

  • Can be stored in the refrigerator until serving.


  • 2 handfuls of arugula; washed, dried, and torn

  • 1/4 EVOO

  • 1/2 lemon, juiced

  • 1/2 cup shredded parmigiano-reggiano

  • everything bagel seasoning
