Almond Joy Parfaits

Simple yet elegant dessert

Almond Joy Parfaits


  • Place 2 Tbs. of chocolate in the bottom of small glass, such as high ball glass or stem less wine glass

  • In a large bowl, beat the cream cheese with 1/4 cup evaporated milk until smooth

  • Add the pudding mix, coconut, extract and remaining milk.  Beat for 1 minute

  • Stir in whipped topping and almonds. 

  • Spoon into glasses on top of the chocolate

  • Chill for 1 hour

  • Microwave sauce for about 20 seconds until it will drizzle

  • Drizzle chocolate sauce over the top of each dessert

  • Garnish with almond and coconut


  • 8 oz. cream cheese, softened

  • 1 1/4 cups evaporated milk

  • 1 pkg 4- serving coconut cream instant pudding

  • 1 cup coconut

  • 1 tsp. coconut extract

  • 1 cup whipped topping

  • 1/4 cup toasted sliced almonds

  • 1 cup ready made chocolate sauce or melted chocolate

  • extra coconut and toasted almonds for garnish
