5 Bean Soup
30 minutes-3.5 hours
What's better than warm soup on a cold night? This recipe can be made with your choice of protein.
If using dried beans place in a large stock pot and soak overnight
Drain and rinse beans
Heat olive oil in a large soup pot over medium heat.
Add green pepper, onion, jalapeno, garlic, and seasonings. Cook until vegetables have softened.
If using a protein add to vegetables and cook until done
Stir in tomatoes, beans, and water and simmer until heated through.
Allow to simmer until ready to eat
Garnish with cilantro
5- cans of beans of your choice canned or dried (if using dried you must soak overnight and cook 3-4 hours
2 Tbls. of olive oil
1 green pepper, diced
1 medium onion, diced
1 jalapeno peppers, seeded and diced
8 cloves of garlic, minced
1 tsp. oregano
1/4 tsp. pepper
1 1/2 lbs. protein of your choice, ground
28 oz canned diced tomatoes, undrained
2 1/2 cups water
